got really drunk on whiskey yesterday and got curious about making bear but thought it would be curious to attempt it blind

Alcoholic here.

I used to drink over 2k calories of alcohol a day. I eventually reached 300 pounds by just sitting on my ass and drinking all day. I found out I had a fatty liver via ultrasound after a blood test showed my liver enzymes were elevated (ALT/AST were high 100's). How long do I have to wait before I can start drinking again? I'm assuming once I drop down to at least 200 pounds my liver should be good. I'm losing 2-3 pounds a week by simply not drinking. I never had much of an appetite for food so losing weight is so easy.

That's not beer, that's grain flavored sugar wine. The bread etc. is not adding any alcohol. And it's going to be shit-tier sugar wine because you used the wrong yeast (champagne yeast is easiest and best). For real beer you need malt, and you need to hold it at the right temperature so the enzymes turn it to wort. Or just buy malt extract.

Instead try (scale up however you like):
0.5g champagne yeast
1g cream of tartar
2g yeast nutrient blend (new recipe, I think previous recipe did not have enough)
150g sugar
1l water

Or if you can't get cream of tartar and yeast nutrient blend, you can skip them and instead mix the sugar water with at least 25% no-preservatives grape juice. Or at least 50% apple juice.

Balloon or condom with pin hole works fine as an air lock. Bleach can be used for sanitizing if you rinse it throughly (clean with detergent before soaking in diluted bleach). PET bottles are cheaper and easier than glass and work fine. Sugar wine is extremely cheap and tastes acceptable if made correctly.

Also raisins are cheaper than grape juice, so you could make DIY grape juice by mashing and boiling raisins then straining the liquid off. But I haven't tried this myself.

OK, so it will give you a little bit of alcohol. But it's still mostly starch, you won't get much from it.

Warmer = faster fermenting, but worse taste. Champagne yeast is best at room temperature (15C to 25C). Really cold and the yeast will hibernate and stop fermenting. Really hot and you'll kill it.

If you're not seeing bubbles within 24 hours you fucked up somehow.

That is a good sign. When the bubbles stop, you can add a little more sugar and seal the bottle so it carbonates. Search "beer carbonation calculator" or whatever. Don't add too much or the bottle will explode. Any contamination should be obvious - if it tastes acceptable then the only dangerous thing in it is the alcohol.

No, you need a specialist supplier. But it's really easy to find, basically all specialist suppliers have it.

Mead is basically the same as wine except with diluted honey instead of grape juice. But honey isn't as nutritious for the yeast as grape juice so it will ferment really slow unless you add additional ingredients. Making mead is very similar to making sugar wine. Just buy a brewer's best kit, a kettle, and a fermenting bucket (they're food safe), and make a 5 gallon batch.

The actual process is actually fun in and of itself. Not to mention the beer you get afterwards. And the beer you drink during. I'd recommend their brown ale kit. It's the only one I've done, and it was pretty good.
