Friday-Monday, Wednesday
Pretty much 5am-2-3pm. Currently looking for a new one though, I'm a rehire and they gave me shit pay
I used to work 4-5 days a week at the very least, sometimes going 10+ days without one off, but the shifts have died for most of the winter, and I only work 2-3 days a week, sometimes not even that.
I now take odd jobs off of Craigslist for shits and gigs.

Thurs to Sun nights / afternoons, about 26 hours or so a week makes me just under 900 after tax. It works out well as I spend the rest of the week looking after my son while my wife works. It's great to be able to spend the time with him.

Tu: off
W: off
Th: 11am-7pm
Fr: 4p-midnight
Sat: 2pm-10pm
Sun: 11am - 7pm

Never worked a true 9-5. Always 8-4:30 or 8:30-5. Did a rotating shift which was absolute hell. Got done Friday at 2:30pm had to be back in at 10pm on Sunday. Sleep deprivation led to a few $20k+ mistakes at that job a few times and got fired.

and class for 10 hours or so on tuesday and thursday

I stretch it to be 40 hours a week with 2 consecutive days off with no clopernings(closing 1 night and back in to open the next day)
Meanwhile in the grim reality of kitchen management my head chef was happy to take a pay cut to "only" work 55 hours a week. He was working 70 hours a week. He does spend most of his day doing prep work(easy and relaxing) or office work. I would take 15 more hours a week for double the pay.

Cooks are a fickle bunch. Offer them 25 cents/hour more and they bounce. Turnover averages 30% month to month. For some of us we get a rush from a packed restaurant that rivals heroin. Like your favorite band that play 300 concerts a year some of us love what we do despite the shit pay and awful hours.
Robots might take driving and most office jobs from us, but people will always want good food hand made fresh by other people. McDonalds will become McRobots, but I see automation having a Herculean task taking on upscale from scratch restaurants. Mankind is doomed once a robot can work the line as fast as a man.
