I was trying to read books about buddhism, taoism and folklore but I got demotivated 10 pages in.

Funny, I recently started reading a book about exactly that. Maybe I should continue reading it.
I know basic stuff like what a yokai or a shinigami is but not much beyond that
I wouldn't go so far as otaku, but it's a passing interest.

I watched the 雨月物語 movie and was intrigued. Now how do I enjoy more folklore tales with my extremely limited japanese without having to resort to some volume published specifically for dumb american weebs with a romaji title scratched in what is supposed to look like pen strokes across or even more cringeworthily down the cover?

If you want to learn about aspects of Japanese culture, you should read books about it in English. Trying to go Japanese only before you have fully mastered the language only means you're confining yourself to reading material for children and particularly dumb adults.
