They want to give the characters strong expression yet if they draw the characters realistically it'll be dull.

Originally "side mouth" was a compromise anime creators used to meet deadlines and more easily lip sync, while proper mouths done in profile were seen in manga, even the manga said anime we're adapted from. Then people who grew up watching anime became mangaka and drew the mouths in the style the anime presented to them.
