If you actually read the whole Old Testament, especially the Wisdom writings and the Prophets you'll see that there is a striking continuity between the Old and New Testaments (which is how it should be). Also the Wisdom books (Proverbs, Ecclesiastes, Sirach, etc.), the other major Prophets (Isaiah, Jeremiah, Daniel), the history books especially Samuel/Kings (which is where you'll read about David, Solomon, Elijah, etc.). Read the lives of the saints and their theological/philosophical works. Augustine is an excellent starting point, then Thomas.

Ancient Greek grammar is rather complicated so perhaps a bit more difficult than most commonly studied languages but you don't have to learn to speak or write it which makes it easier in a way.

You can also learn modern Greek very easily once you know some ancient Greek which gives you more varied material to study. I mean you can watch Greek TV, listen to radio, music, read books, magazines or whatever, have conversations with Greeks. The vocabulary is largely the same and even grammar is not hugely different so I feel like learning modern Greek makes learning ancient Greek easier and more enjoyable.
