The non-meme answer is because:
a) Catholicism prohibited usury so Jews were the only guys around who were willing to lend you money (for interest of course); after a while of accumulating denbts, the aristocracy/king thought it simpler to just expel der Juden instead of paying denbts
b) the common pleb was REALLY into Christianity and blamed Jews for killing Jesus
c) Jews themselves didn't help their own cause by being super insular and exclusive, thus perpetuating an us-vs-them mentality in themselves and their host nation
d) the fact that Jews were greatly more literate than locals (since Jews had to study holy texts personally whereas Christians got recitals from priests) lead to Jews filling up high posts in the burgueoing state apparatuses of various medieval countries, breeding even more resentment

All those combined, with the addition of time = anti-semitism.
