It was the other way around. Before the Tokamak design was published by the Russians back in the 1960s, most fusion research was in stellarators. But leakage was way too strong and the initial Tokamaks had a lot better results.

Then in the 1990s, the Tokamaks hit their design roadblocks when scaling up, making stellarators interesting again... especially with a better understanding of plasma flows and the emergency of supercomputing, stellarators are now one of the three front running technologies for fusion power - alongside large scale Tokamaks (which are hitting major economic roadblocks) and compact Tokamaks using strong magnetic fields (which have hit various technological problems).

The beauty of stellarators is that they don't end up producing a massive internal electric field as Tokamaks, but a nice steady twisted plasma. As an analogy, you can think of stellarators as nice steady airships while Tokamaks are chemical rockets. Yes, we know chemical rockets can take us to orbit, but the question is, can they make us a spacefaring civilization given their costs and design limitations? All the while we haven't made airships go to orbit, but if we could, we had a smooth and nice and probably fucking cheap way to get to orbit and to ultimately get a shitton of stuff to space.

As I said in an earlier post the neutrons are used for the actual power generation as they are moderated and captured in the surrounding wall.
When you mention damage to the wall that is one of the key issues at the moment as it is hard to replenish the walls without shutting it off and then you have to access it remotely.
The point of ITER is that it will be so much larger as to allow for more test samples to be fielded to assist in the material research.

The neutron flux itself isnt boiling the water, there will be some heating but most comes from the neutron interaction with the wall of the reactor, there is no set design as yet, you could have a liquid salt wall which flows and is heated taking the new tritium and heat from the reactor to a heat exchanger to heat water.
Alternatively there could be heat exchangers built into the walls that take the heat directly, likey to a heat exchanger again but potentially straight to a steam dryer.
As I said there is no set design yet for the power generation as there is no set composition for the walls.
Tho I would like to imagine if britain ever built a comercial fusion reactor we would probably go out of our way to be different like with the gas cooled reactors.

It's not nearly as simple. The restrictions on what a neutron can and cannot interact with are myriad and complex; the faster it goes, the lower the chance it will hit a nucleus. Most of the times it will just ricoshet of the nucleus without any gamma radiation/nuclear reactions and just heat up the material.
