"Roter Amerikanischer Sumpfkrebs" is what Germans call "Crawfish".

Being a Louisiana resident I have crawfish all over my yard. They're not the kind you eat though. There are many species, you can't just boil any of them and enjoy them.

Regardless, if you do have a problem with the tasty ones the following recipe makes for a nice gathering.
40lb sack crawfish
one jug of swamp fire seasoning
four sticks of butter
Six lemons
10lb bag red potatoes
6 large white onions
6lbs smoked sausage
4 quarts of sliced or whole mushrooms

Large aluminum pot 10gallon
Gas burner


Get the water to boiling, add potatoes, add seasoning to taste, add butter

After boiling until potatoes are almost cooked, add crawfish and remaining sides wait until pot gets to rolling boil. Turn off flame, let stand for ten minutes.

Optional add ice to quench pot for extra spicy crawfish

I also like to add cheap hotdogs and garlic.

Eating whole garlic out of crawfish boil is the best. Brussel sprouts are good too, but if your doing several batches you want to wait to do those last because they make the water stink.

Zats is a good classic for sure. Have you tried swamp fire? Usually with Zats you have to add a lot of Cayenne to get a good spiciness.

My neighbor taught me about the butter. Just adds something extra that's hard to describe.

Ever noticed alot places outside south louisiana only sprinkle spice on after they boil. Try it once and it was awful. Still havent figured out why either. maybe they just dont have the patience to let them soak.
