That's because you've been out of secondary school too long. They specifically teach kids how to pass the exam, how to interpret questions and what information to give in their answers, rather than teaching the content and leaving them to work it out on their own. It's part of the declining academic standards; it's not that they've gotten easier per se, more that the teachers essentially hand templates for all the answers over and the kids just have to add in the appropriate words/numbers.

If you want to go into a profession (law, medicine, STEM, etc.), and need your graduate degree, you won't get into uni without them.
For actual vocations, experience is always infinitely better, but a lot of employers do specify they want maths and English GCSEs just to keep up a minimum standard. Having said that, if you've not got them but do have ~5 years in the field I doubt they'll protest too strongly.

It's entirely possible to have an Earthly respect for architectural achievements while still respecting the holy significance of the building you're studying. This is not a new phenomenon, as early as the 15th century people would travel around Europe studying cathedrals and monasteries, making sketches and rubbings of the various features to share with people, and this was hardly a time where people's spiritual health was in question.
