Because in Gnosticism we have a thing called the Hebdomad. The Seven Archons were each linked to a Planet.

Saturn was for the Chief Archon, the First Ruler known as the Demiurge. Yaldabaoth, Samael or Saklas.

The other Archons are his creations and they were given other planets linked to them.

So Saturn is like a representation of this Father of the Archons.

In Rome they saw these gods of the old pantheon as Planets also, but in places like Greece or Sumer they had other names for them.
