Regarding your picture, that's a theory that fits in a much bigger picture. You don't "believe" in it. Doubt is the cornerstone of science and scientists recognize this fact - that there are no absolute truths, just approximations with a basis in reality. Take conservation of mass - Einstein comes and proves that if an object moves at a speed near that of light, mass conservation breaks down, counter to centuries of thinking otherwise. Now, the same thing happens at lower speeds too, but the changes are so insignificant that people ignore them and just use the simpler approximated "reality". And still, people are aware of the other "reality" that's closer to "truth".
The issue with "proof of God" is that it's just based on dogma, on belief. You can't prove it, or disprove it. It's not something that can accept the idea of doubt.

They're not really. For thousands of years we've crossed randomly hundreds of plants and their thousands genes, now we're finally able to introduce a single gene, producing a single protein of interest to modify the plants with more secure baby steps.

For example the carrots used to be white and the bananas were not sugary, they were like plantains, a few centuries ago. Until random and human-directed selection led to the red carrots and sweet banana mutants that we eat every day.

Difference is, on one side you do random shit and sometimes make a new plant that produces toxic compounds, while with GMOs you introduce a single gene, you know what the fuck you're doing.

Example: the golden rice. Exactly like a carrot, it's golden because it produces a shitload of vitamin A. Unlike the carrot, it didn't take centuries to invent it and it has a single gene more than normal rice.
