Why does it seem like virtually all major societies, save for Western ones, are and have been extremely socially conservative, and Western ones were so as well up until 50-60 years ago?

If you had a choice to live in any country now that has gay marriage vs one that doesn't most would choose to live in a country that does. Almost all the world's most desirable places to live offer gay marriage.

Wealthy, happy people tend to be both more intelligent and interested in personal freedom. But more than that lots of conservative traditions existed for reasons that are barely relevant today or at least a low priority or were simply tailored to the views of the elite. Securing your bloodline for example is now a low priority because people can live up to a century, our life expectancy is still increasing, child mortality is low, etc. and the average person doesn't even care.
