What then happened? Well some farmers started investing in more machinary.

this. I used to work at a vineyard in the foothils of Nor Cal picking grapes and basically all my friends and I were undercut by spics in the valley who weren't even reliable workers. Down south, I knew some farmers that would pay local high schoolers and questionable brown skins under the table at around 10 bucks an hour. Very decent in those areas, as jobs are already kind of spread out and sparse.

I worked up north now in abouts the Jersey area, fixing up shitty houses in shitty cramped areas. Regularly run into Mexicans who literally ran across the border, and they tell me the reason many drop local farmers for fix-ups/landscaping is that they rarely pay mininum wage to them, sometimes even less than half that depending on the work. Don't like the idea of barely being able to feed your family for a fulls day work in the sun, then you can just get lost, as there's always some other poor bastard who can't get work elsewhere that week and has rent due.
