Somatic Cell Count is referring to immune cells present in milk. ALL MILK HAS IMMUNE CELLS IN IT. You cannot get milk without some amount of somatic cells, the complete lack of which implies that cow has NO IMMUNE SYSTEM.

The count is used to judge milk quality. If a cow is sick, their immune system is triggered, and you can expect a higher somatic cell count. This is not the same thing as pus. Tortuous conditions causing sores on the udder is a different discussion entirely.

It's not the bacteria. All human babies possess the ability to drink milk (see: breasts) because our bodies naturally produce the enzyme lactase. Being able to continue to drink milk past this stage is lactase persistence. A mutation found in some human populations.
