Because they earn so much and have paid off their loans (smart students will have graduated mostly or completely debt free because of internships and co-op). The TFW myth is overblown. Good foreign employees know they are good and expect appropriate compensation. The ones that come here to work for peanuts are usually not that good and don't do that well.

I would encourage you to look for work in automation. Alliston, Windsor, Oshawa, etc. MechEs with knowledge of PLCs can make a lot of money. If you are really running into that much trouble finding work as a Mech, I'd suggest you do a couple of software courses and just jump into a software job. There are lots of positions in Van, Waterloo, Toronto, Ottawa and Montreal.

But yeah the career centres are usually good, you should let them know you are having trouble finding work especially if you are a recent alum. They are supposed to help you.
