the idea of tens of different words to define snow is an excellent way to discuss this point - for example, you or i may both experience 'type 37' snow, and enjoy it for some specific-to-type-37-snow reason which we just can't put to english.
we cannot really explain it to someone the next day, or write about it in our journal, or retell the story to our kids some day.
but - if we experience type 37 snow, and say it was fwooshy, and we agree, and document it - and then the next guy comes along and says ,oh, this is that fwooshy snow!
now we have a concept benchmarked, and we can talk about it with a common understanding in shorthand.
if we don't have a common shorthand understanding it takes all of the dancing around "it's type 37", it has "this quality", it happens under "these circumstances". replaced by "it's fwooshy", and thrown in the dictionary.

Fundamentally changing languages is immensely difficult, and I don't know of any recorded change towards a more complex system. You can, however, expand your library of concepts and relationship models by learning other languages.

The emergence of natural languages is still very much up in the air, we don't really know how they stabilize. It seems to be a process of going from the lexical to the grammatical, but the point when the formation of grammatical categories crystallizes is hard to pinpoint. However, tenses, moods etc. only seem to reduce in number with time. Also, any grammaticalized lexical constructions seem to fit into preexisting categories, usually conjunctions or adverbs.
I don't know of a language incorporating a more complex system after stabilizing - such as a non-case language adopting cases - is what I should have said.
