Oh I tend to use worcestershire now and again to mix up the taste a little. I have never had success with balsamic for some reason, it always comes out tasting off. Oh yea for sure. Ostrich meat has extremely low levels of fat, so you can easily cure it without it going rancid, since fat going rancid inside the droewors is always a issue. Ostrich overall makes good biltong, its chewy and healthy.

Also, I am going to try some teriyaki sauce as a marinade in a small batch next time. Should be interesting.
