Atmospheric lensing can cause the sun to appear above the horizon when in fact it should be behind it. The closer to the horizon the sun gets, the stronger the effect.

What this means is that the sun's light hits the atmoaphere, and is artificially curved, such that curves towards the ground. Over large distances, the light would curve towards the ground, producing a horizon even on a flat surface.

However, the sharpness of the horizon is such that it doesn't look like we live on a flat surface, but the inside surface of a sphere.
