Profits would not be cut until you expand too large. You can be as successful as you want as a single restaurant, farm, factory, etc. It is only once you start to take over other businesses that the government intervenes.

How would scammers be dealt with. What if you go to a small restaurant and get sick or discover some human fluid in your food. This is one upside to big chains is because if one restaurant is shit the whole company gets a bad reputation.

I had a small family business try to scam me out of 2000 dollars. This HVAC guy said my whole condenser unit needed to be replaced. I called out another company and they replaced the part. The scammer also offers free calls to veterans and tries to fake a reputation that he takes care of vets. Total piece of shit the guy is and he has high reviews.

That is a good question. I'm not quite sure, there's different ways that such an issue could be solved. The local city or state government could be alerted to the issue and then policies set in place to prevent it, or the guilds themselves might warn people about the scammers to keep up the good image their industry has with the rest of the population.
