The last major outbreak they figured out that some dude from a rival company had direct access to a Chipotle distribution center, and also had access to a virus that is only engineered in specific labs (not just out in the field). Chipotle actually has really cheap humanely raised meat and great produce. And has been pushing that into the market effectively, making competition who have repeatedly said that economically its not feesable look really bad. We had a major meat company "maple leaf" who had a few incidents and operated at a loss for the next year but has much higher standards than most companies now because a further incident would likely end them as a company. That's pretty awful, but from what I know of the food service industry (worked BK and Taco Bell, a total of nearly a decade, ended up management at BK), that's definitely not the norm. We had INCREDIBLY strict guidelines on how long food could remain on the line. Take BK for example. We only kept food in the heat chute during peak breakfast hours (usually two of each croissant since they're always on sale). Beef could only be kept in the heat racks for two hours, and had to be temp checked every half hour. If the beef was below 165° (even by a degree) it got wasted. Same with chicken sandwich meat. Lettuce and tomato could only remain out of the fridge for 4 hours before it had to be tossed, and it was kept on ice. Cheese was I think three. Onions and pickles got six but at my stores we only prepped a little so they weren't just sitting.
