They were built to show that these villages were big shit on the trading routes. That they were strong wealthy powerful.

If you were a merchant, you'd see the tower in the distance and go, oh. Better stop there.

Towns that had towers were more respected than towns that didn't have towers.

It was basically a way to attract business and increase the prestige of your town. The towers themselves served absolutely no purpose at all other than that.
