The question does not make much sense but it really depends on what era of Old Norse we're talking about, for example, the language on a 9th century runestone from Sweden is not identical to the language of e.g. Konungs skuggsjá (what we might call "classical Old Norse").

The Icelandic language is very conservative but it has still changed much more than most Icelanders are willing to to admit, particularly the vowels.

Personally, I am not very fond of fiction or litterature, so the Icelandic sagas have never really captured my interest. They seem no more riveting or better written to me than any modern novel; they also cannot be used very seriously as historical sources (except for whenever several sagas confirm the same facts, or if there are some other good reason to accept the narrative of a saga). Konungs skuggsjá (which is Norwegian) far surpasses them, in my humble opinion; it deals extensively with ethics, etiquette, family relations etc.
Regardless of my personal disinterest, most scholars absolutely adore the sagas. As cultural treasures of Nordic heritage, and as the primary source of our Old Norse corpus (in particular most of the dróttkvætt poems), they are certainly priceless...
What I have found most rewarding to study are:
- the Eddic poems
- the art of Germanic poetry
- religion and sorcery
- the runic material
Law texts are also fascinating at times, for the most part they are quite boring but every now and then you can read some extraordinary tidbits. In pic related, for example, there is an explicit ban on mothers to bite off a finger from their babies for, I quote, "the sake of a long life" ("till langlivis"). It isn't clear whether the finger bite is intended to benifit the child or the mother.

I don't know what either of that means. All languages change; with regards to Norse, the most interesting period is the syncope period (Proto-Norse → Old Norse), which triggered, among other things, the development from the Elder Futhark to the Younger Futhark.
Icelandic does not have any mysterious superpowers. The secret is actually very simple: the black death never reached Iceland, and so the language was never destabilized. It's literally just happenstance.
