It records and saves it all the time. After a specified amount of time has elapsed, let's say 30 seconds, the old footage is erased and overwritten with the new one. Basically, the same way black boxes work on air planes.

To give you an example, let's say you start at time t = 0s. After 30 seconds or t = 30, the memory limit is reached. So for each subsequent second, it deletes the oldest footage to make space for new one. So at t = 31 seconds, the video contains the footage from t = 1 to t = 31. At t = 32, footage goes from t = 2 to t = 32, and so on. Whenyou reach t = 60, the footag 30 to t= 60. When the button is pressed, this proccess stops, and the footage is no longer erased. So lets say at t = 60 you press the button, then from now on, all the footage from t = 30 to t = 60 is kept, and anything from t = 60 and onwards is saved.

I've watched enough cops to know when a drug plant is the difference between catching a notorious drug runner with a high body count vs rescuing a dealer who's at the end of his rope.

Example:

If you find something you either leave it there until a CSI shows up, or you pick it up and catalog it. you don't pick it up, move it around, plant it back at the place you found it, walk away, turn your camera on, go back to the place where you planted the evidence, pick it up all surprised and claim its evidence.
