Because Syria and Iraq was designed to be unstable. Due to WW1 propaganda France and Britain could not take the areas as colonies (because that is what they claimed Germany fought for) so they wanted to make them into 'protectorates' by drawing the lines so they were as unstable as possible. For example shia is majority in Iraq so Britain made sure a kurdish-hating Sunni group was the ruling elite and so on. The lines you drew, OP is the same as the autonomous regions in the ottoman empire and they were largely in peace the last 1000 years except during the crusades and ghengis khan. So we know those areas would be stable and Britain and France would not be able to exert influence. It did not go as planned for Britain and France, but it did make the area unstable.
