The Greeks and Romans wrote down plenty of their stuff. The problem is that much of it doesn't survive. We've still got a lot however. The Bibliotecha, Hesiod, Ovid, etc etc.

It's a little different for the Germanics. Continental Germanics, Anglo-Saxons, and the Norse all had their own writing systems (Runes) and wrote quite a bit. I find the notion that at no point did either a Roman nor a Germanic sat down and wrote about continental Germanic religion to be simply preposterous, especially after Germanics had well integrated into the empire. But, such a text does not come down to us. We do however have a vast collection of Sagas, poems, and texts. The two Eddas (Prose and Poetic) survive.

No writing of the Celtic and Slavic paganisms survives to us. Again, I highly doubt no Roman or Celt EVER wrote down anything about the Celtic religion prior to Christianization but no such text survives to us. The Slavs never had contact with Rome and when the Byzantines came they were hardly interested in the Slavic pagan religion. No Slavic Pagan texts survive to us (They didn't have writing). However, Slavic Neopagans have the Slavic Vedas. It's not a historical text (It was made in the early 1900s), but that doesn't stop the growing Slavic Neopagan movement from using it as a holy book.

Not now. Back when Constantine was playing theology there certainly was. The Father is the highest god and every religion sees some portion of him (Yahweh, Zeus, Tyr, and Jupiter are all just four ways of looking at the same entity, but none of them encompass him totally). All of the rest of the gods then accept Jesus as the proper way to get into the afterlife. This is basically what Buddhism did, and it resulted in Hercules and Boreas being protectors of the Buddha.

First, I believe Helheim and the afterlife reflects how you lived in life. Warriors are taken to Valhalla or their Gods hall to fight with the Gods in their afterlife. Peaceful people go to Hel to rest and I think most people will have good afterlives if they were good people themselves. Only warriors would go to Valhalla but Valhalla isnt the only way to have a good afterlife.

Paganism is like judaism, a religion that is astrological dead.

What you are describing is culture, not religion.
