What you're leaving out is that those inbred lines are very carefully selected for very specific desirable traits that will get passed onto the offspring. You're also leaving out the fact that the offspring will not breed true and you'll get some unexpected shit in the F2 generation. If you don't intentionally inbreed corn for specific traits and breed different populations with each other, you can wind up with a superior (for your area) cultivar after several generations, but the results are something that would be very cruel if it were to be applied to animal populations for many of the individuals in early generations.

Outbreeding depression. While some offspring will be better adapted to their environment than either of their parents, others will be worse adapted. There is heavy selection pressure against these individuals. If you live in an area with raccoons, individual plants that produce their cobs low will not pass their genes on via seed, because the raccoons will eat them. Each successive generation, the cobs will move, on average further and further up. This will inevitably lead to some skinny corn stalks with cobs way up high, which means that it is likely to lodge (fall over.) That's not good, and that is outbreeding depression. The same principles apply to the animal kingdom, including us.

TL;DR: Just don't knock up anybody more closely related to you than 3rd cousin and you'll be fine.
