Do you think that America should follow the Japanese example where instead of trying all sorts of different interest and careers you pick one hobby early on and pretty much dedicate your entire life getting good at it until you've completely mastered the craft?

yes, and my unpopular opinion is we should return child labor (but regulated this time) so children can build skills at 12+ and not spend all day on ipads
People's used to do that, they followed in their fathers footsteps now kids don't have a father to look up to

I would personally say at 15 or after one year of high school a child should be allowed to leave for work if he wants, not all jobs need an education beyond that.
