Why does the definition of "white" keep changing?

It used to be that Italians and Jews aren't white.

Now, they're even some Mexicans are considered white.

Some parts of /pol/ is even trying to include the Japanese and Korean under "Honorary Aryan" bullshit meme.

Why is this happening?
