Depends on where you are in the state, it's the size of France. Dallas is just a big city, not even an interesting metropolitan area, just a business hub and thoroughfare for travelers. The Schoolbook repository and the Grassy Knoll are cool place to visit.

The small towns are nice, cozy, and quite if it's predominantly white, land is cheap and there's shitons of it. Lots of southern culture and burger related things, freedom, land, cattle, etc.

San Antonio was a fun place to visit too, touristy, but still enjoyable. The Alamo is boring if you're not from Texas or a history junkie, but the Riverwalk is alright if you like tourist stops and restaurants. Pretty town otherwise.

Those are the only place's I've been, I'd go to Austin for the experience but it's pozzed so I don't know how much I'd like it.

That's only in Dallas/Houston because Hurricane Katrina slung blacks all over the state and most went straight to the cities. A quick glance at the responses tells me that I may be the only Texan present.
Anyway, having lived around this state for many decades, here's my summary:
The state is broken up into many different climate zones, so even though there are only three types of towns, these three archetypes can be found in any weather conditions imaginable.
You have smaller towns without colleges in or near them. These places will often be good for hunting, fishing, cheap land, and very spread out populations. The population will range from mostly blue collar conservative republicans and Jesus freaks to moderate hippy pro-gun pro-pot "just keep the gov away from me" types. There will be a part of town where thievery and meth abuse run rampant. Examples: Onalaska, Trinity, Gonzales.
You have small towns which have a college inside or near them. They are exactly like the first group but there will be a thriving center of liberal ice cream parlors, brick oven pizza places and craft beer spots in one area of town. The drugs are more diverse. Otherwise yeah just like the first type. Examples: San Marcos, Marble Falls.
Third type of place is either San Antonio, Austin, and Houston. I've lived in Houston most of my life so I can only speak extensively on this city. It is a NeoTokyo level dystopia of concrete and minorities. Everything is too expensive or in a neighborhood where you literally have to keep a chambered pistol at the ready at all times. I hear San Antonio and Austin hate white people more, but like I said that is second hand information, I personally found both cities to have all the problems of Houston without the benefit of having cheaper, whiter suburbs just outside the city limits.

Lived in deep east Texas near lufkin all my life, we got some meth-heads but besides that its real nice out here. I go to Houston and Galveston sometimes to go do stuff in the city but its gotten pretty intolerable in the last 5 years.

I grew up and currently live in the DFW area. It's okay. If you live in the burbs like I do it kind of sucks because you have to drive everywhere. the trade off is that you don't have to live near poor people that rely on public transportation.
