First off, your pic seems to imply that we evolved from apes that we have around today. But in evolutionary theory both apes and humans evolved from a more primitive common ancestor. You might still mean the latter however and just have picked this picture to represent your theory, so I'll just give you that.

Second, the other forms in between ape and human didn't die off. They evolved into humans. The other forms of human-like branch-offs such as Neandertals died off from various other problems or changes in the climate. But even if we have no evidence for why they died off, that still provides no evidence against evolution.

None of this proves that one species can transform into something else. A mutation cannot make a dog grow wings. Mutations can lead to disease and defects such as some of the defected brains of people who support evolution itself, but does not prove that monkeys will eventually grow a pair of gills and become marine mammals.

There's also new sequences being introduced since mutations makes genes that the parents didn't have.

First is that punctuated equilibrium can result in sweeping changes in a population in a relatively short period of time, leaving fewer room for intermediates to fossilize.

Second is that it is magnitudes more difficult to create a functional clade using fossils of the same genus compared to using fossils of the same class.

I'd attribute it mostly to humans engaging principles of selective breeding upon themselves. You've seen what we've managed to do to other organisms we've been in close contact to. How does your post about the fish refute evolution?

1. The Coelacanths have various individuals.
2. Some individuals have mutated offspring that disperse to a different environment and are adaptive there, and so survive and produce more offspring, and this chain goes on leading to more basal species
3. Other Coelacanths' offspring aren't mutated, stay in the same place environment where they're most adaptive, the environment doesn't change much so they are always the most adaptive form for said environment, any mutated offspring that stay in the same place and are less adaptive die = the Coelacanths survive and don't evolve for millions of years

Whether the Coelacanth goes/went extinct or not is irrelevant to whether it has descendants living today that are mutated enough to be different species.

In what context is something fittest? The environment. A Lion is the fittest in the Savannah but dump it in the ocean and the sharks are the fittest.

Some of the Coelacanths get dispersed to new environments by chance, i.e ocean currents. If they have adaptive mutations they survive. That mutations makes them a little less like the original Coelacanths. Repeat this over millions of years and they're so mutated they're not like the original.

Other individuals stay put, those ones are the fittest in their current environment, so they stay the same.
