People build stuff with the materials they can afford. Stuff like castles, churches, universities, government buildings, etc, are meant to bedazzle and will look outlandish. For most of history, people lived in simple houses. Cowshit and mud were used as daub and adhesives well into the 20th century, as did thatching.

Vikings for example built houses of timber in England, Poland, the Baltic, Russia, etc where there was little stone but then built stone houses in Scotland where they was a lot. They built houses of daub-wattle in Ireland because that's what the native Irish were building when they got there.

Turf isn't necessarily a bad thing either. Remember most 18th, 19th century forts were made of turf. Again, to each own's needs and economics.
