They are a huge agricultural pest, they are a serious hazard to motorists, there are literally more kangaroos than people in this country, and their meat is excellent. Kangaroo isn't very good for premade burgers, sausages or meat balls. Comes out too dry. It's ok as mince if you season/sauce it right but there is better alternatives. Kangaroo is best as a steak, shish kebab, or stew.
The absolute best is to get some kangaroo steak and slow cook it as a chilli according to your own recipe and taste. Then you can serve it as a nachos, sloppy joe, burrito, taco or what have you or just serve with rice or whatever.

A personal favourite is slow cooking kangaroo steak with emu steak in a good gravy and making Coat of Arms Stew. If you like youbcan put this stew into pastry and make Coat of Arms Pie. But I like to just enjoy it with some good old mashed potatoes.
