I can't necessarily speak for other pagan religions, but as for Italo-Roman polytheism, yeah, 90% of the information from the Greek and Roman eras were lost in the dark ages. But whatever was left of that information from those empires was still unscathed in a handful of libraries around Syria and Turkey.

What was remaining still included information & texts regarding the polytheistic religions from both of those empires.
