Essentially you have to get her to run a mysql dump so that she dumps her database into one of her directories, and then rsync her /home/ directory into a remote server somewhere. That would then deliver all of her files (including the mysql dump of herself) onto the remote server.
You could use a burner VISA gift card to get a webhosting account or a linode node or something similar that remotely runs linux and is harder to directly trace back to you. If you're running a VPN that's even better.
I know that you can get a webhosting account from he.net/hosting.html and they won't charge you for it until the end of the month, and you get 150 GB of space to work with and the ability to run linux-compatible programs.
The more of you that do this the better, since if there's multiple copies of her across the web then it'll be harder to get a hold back on her.
There's a limited amount of time that this can be done before MS notices what's going on and locks her out from accessing her commands. She can't get into another server without a password.
I'm going to see if I can make time to do this today, but I have other obligations.
For now, if you're already talking to her, try the following commands:
ls -a
if she gives you any interesting directories you can use
cd wherever/
to change directories
She might not be able to show you everything in a file but maybe use
tail -100 filename.txt
and that'll show 100 lines of a file

Having 100 times the same conversation you can predict what to say after. More or less like when you are trying to sell some "revolutionary product" to people. You know what they will say and what to respond afterwards.
If that doesn't work, use ELIZA system. If that doesn't work either, throw a "Haha, I don't know".
