Anyone got models on this sort of skill level? I've already made one and a phoenix and need more challenging models :)

try stephan webers bull the folding is easy, but the shaping. no as much. there's a lot of shitty images of his bull make sure to take the pictures on his homepage origamilive as an example.

I'm having a hard time believing that. Maybe if one of those steps is "precrease this CP" with no reference point or "collapse the CP" without further indications.

This. Try some stuff from giang (?) din or Eric joisel. Their models are far less structurally complex but are insanely hard to shape. Eric joisels dwarf, though very easy to collapse is extremely hard to shape. I personally haven't seen a rendition better than Eric's
