I would like to add Sara Adam's Youtube channel. She has recently stopped making videos, but she has enough material to keep you going for years to come. One thing I like about Sara that's not necessarily true for Tadashi Mori and Nakashima is that she tries all different kinds of origami instead of sticking to one mode, like birds or modular.

Happy Folding!
I was in this planet when internet doesn t exist. In those days i had been very happy with a book easy to hard. I strongly recommend you this book:

Just what said first and second: Tadashi Mori and Jo Nakashima. Then you can try with Kade Chan
At my work I have an unlimited supply of 4 1/4" x 2 1/2" label backings that seem perfect for folding. Can I make anything interesting with these?

- Cut 2 1/2" squares out of it and fold whatever.
- Cut two 1 3/4" squares out of what was left and fold whatever.
- ???
- Profit.

I did that and made a wolf. Used three bird-bases and it came out relatively well
