I'm very much a beginner to photography. I really like birds but they never seem to stand still long enough for me to shoot them properly, the little shits. I also never seem to manage to nail focus on the bird, its always either in front or behind it, and that is with single point AF and a smaller aperture. Shooting birds is hard.

Those consumer zooms don't get decent until f/8 and already fall down the shitter at f/11. The Canon 50-250 and the Pentax 55-300 are somewhat better but only marginally, the general rule of shooting at f/8 still stands.
Also use zone focusing and avoid clutter and branches in front of the bird. For tricky situations, no matter how good is your AF, only manual focusing is the way to go.

Forgot shutter speed. Generally 1/1600 and higher is needed. Birds, especially small ones move very fast.
ISO usually don't get below 800 with pro bird photogs, ISO 1600 is still good on modern bodies, Nikon and Pentax can manage well with 3200 or even 6400 if framed well (no crop needed).

I did mention modern cameras, why are you comparing your ages old tech rebel?
Jokes aside, 1/800s is mandatory even for perched ones because they move in twitches, 1/1000 and higher is highly recommended.
Sadly Canon still gives its old iso variant sensor for their rebel series, but iso 800 and 1600 should be still usable. You just need to get closer and use fill flash to get more controlled light in the shadows.
A bit of grain is much better than motion blur. Search "paradigm shift in bird photography" on youtube and start saving up for at least an 80d or switch system to a d7200.
