Generally I'll just try to remain inconspicuous while I take the actual shots, then approach them and ask if it's alright if I Take photos of them. Most of the people I like to snap are young women who are more than happy to take photos (though the ones I take after asking are almost always utter shit, pic related.)

However if they notice me I'll approach them to apologize and show them the photos. If they're good, they're usually OK with it, and if they're bad, I was probably going to delete them anyway. Even if I really like them if they ask me to I'll delete them there and then. (They don't have to know I can recover lost files off my SD card.)

I don't think I've seen even one person get nervous while I'm taking pictures. Like seriously, even when they catch me they're kinda just like "that's weird."
There was this one old black lady who confronted me, but that was when I was shooting with my wide-angle and she only just-so-happened to be in frame. I was confused at first because I didn't even notice her there, and by the time I figured out what she was talking about she'd already gone. It was a shitty shot anyway so I deleted it.

If you ask me, it's more about the photographer than the act of taking the photos. If I was some greasy, trilby-sporting fatass I don't doubt I'd start fights by just holding up a camera. But since I'm a clean-cut, average, inconspicuous-looking dude most people don't even care I'm there.

you're in public, an expectation of privacy is unrealistic. people can see you and hear you, there is no reason to expect they arent recording you.
