And the reason why is rather simple: People don't like to feel like they've been duped.
Most pro photographers use Canon or Nikon. They've invested many thousands of dollars into equipment and many hundreds of hours into working with that platform -- so when a new camera comes along and reviewers say "DSLR killer" and "New tech" and "DSLRs don't have X", these people get defensive about their investments and purchases.
It's only natural that we want to believe that we made the best decision. And when information comes out that goes against that decision people get angry and frustrated and go on the defensive.
Your 1dx and D5 are still great cameras, no one is remotely saying they aren't.

It has all the amazing tech in it, yet it wouldn't survive a day in a life of d5/1dx, through jungles and deserts and warzones. It's already quite large and the pro lenses are all massive, why not push the limit a little and get it completely right the first time? And keep the a7 line smaller. You're right about the fact that people don't like to get duped tho. Sony does many things right, but there's always something infuriating about them. I have rx100iii and while it is pretty nifty thing in tech pov, it is gimped by the horrid interface, reducing it to a basic p&s. I much prefer my lx100. Likewise, I wanted to like a7, I wanted to like a7ii (I'll probably buy one when I find a good bargain just to fuck around) but using them felt like trying to eat the most delicious cake covered with broken glass and rusty nails. Thus, after a decade in the nikon land, I went with fuji for my main system, and I'm happy with them.
The only people this argument is ever going to truly concern is:
1. Every amateur/semi-pro photographer who spent more than a thousand bucks on photo gear.
2. Every amateur/semi-pro that has actually invested a notable amount of time into their photography hobby/small business.
3. Every amateur/semi-pro who just finally got their first big-boy camera (flagship or high end)
4. Every amateur/semi-pro that thinks their work is pretty amazing.
Actual industry professionals don't really give a damn because they know what they are doing. By pro I don't mean someone who has shot a few calendar/postcard-like shots of horseshoe canyon on a nice sunny day. People who actually live in their work daily.
The people who argue about what is better or worse are just like your typical douchebags when it comes to cars. It works like this, if you start tilting or shifting a lens and the movements go outside of the image circle, you start to see a pure black vignette creeping into the frame. The lens couldn't record outside the imaging circle, so you get the black nothingness.
A tilt shift lens is designed with a much larger imaging circle than a normal lens. IF you take a non-TS lens and try to shift with it, the black nothingness creeps in much sooner. You can't "correct" for this because unlike a vignette where it's just darker at the edge, this vignette has nothing in it. It's pure black, with zero information at all. You could, in theory, content-aware fill the missing info, but at this point it would've made more sense to use an actual T/S lens, or shot at the best angle you could before correcting for perfect verticals in post production.

What you clearly have no fucking idea about is the constraints of commercial architecture photography, the only real scenario ts are used, first and foremost is the best focal length, you want the building to work with it's background and you will have massive restrictions to maximum shooting distance in 95% of cases.
When I shoot architecture I take a 12-24, 17-40, 15mm, 20mm, 28mm and 35mm with me along with a couple of ts adapters. I used to have a 24mm ts and 35 shift, but they were just too niche to be justified purchases. I'm probably in the top 10% for my day rate for commercial architecture photography.
