When I shoot people like this, I hold my camera at hip height and walk past, changing ISO roughly by eyeballing the area - mostly just guesswork and hoping. But idk how he saw me take it, C'est la vie

OP here, I'm actually severely colourblind which is why I tend to shoot more B+W, but thats merely so I know the picture I think I've taken is the one I actually have if that makes sense?

I like your pic, would like to see more of the guy in frame as the bubbles draw your eyes away from him, cool capture tho

Not that guy but I agree that the first one is my least favorite. Maybe because it's a photo of a photographer, but it feels kind of artificial, like she's striking a pose.
Most of your other photos do a really good job of being very natural, just showing average people going about their day, which I think is what streen photography is all about.
My favorites are

I actually like that there's a lot of space above the guy's face, it makes his apparent joy more of a "discovery" since the eye has to move down the photo to see him, so you see the bubbles first and his reaction to them is the prize.
Great use of DoF also.

This one in particular, there is so much to look at and there is a whole lifetime story in the woman's face to be told.

The only thing that bugs me is the tension between the edge of the handicapped button and the lower edge of the frame, but given that the face above is grumpy, perhaps that's good tension.

Usually they don't realise I'm doing it because I do it pretty inconspicuously. usually if people spot me it's just "lol ok", I'm totally within my legal rights if I'm in a public space so there's nothing they can do about it. sometimes you even get people who see the lens and strike a pose which is chill.

The key like OP said is to be quick enough with it that it really doesn't offend anyone. The real key is that if someone vocalizes their issue with their photo being taken or it seems to of upset them just kindly offer to delete the photo.

I'm not that guy but still agree with him. It doesn't take a street photographer to tell the photos suck. I could post some of mine and get roasted but who cares? Look at the best street photographs around there. They're full of imperfections but at least the don't have that awful bokeh.
