So my gf here and I are going through a Museum in Germany. Why aren't we allowed to take pictures of the paintings?

It probably depends on the place. I went to a bunch in Berlin and I could and I couldnt.
In Vienna I could take a picture of everything except for Klimt's The Kiss

Because they charge you to look at the paintings. If an image of said paintings is readily available then that's lost revenue for them.
Also some old-ass paintings are sensitive to UV and they don't want Americlap tourists coming in and blowing the thing up with flashes all day.

Two reasons:
1) camera flashes can damage the paint, so it's pretty much always banned.
2) Many museums don't want shitty amateur snapshots of their paintings flowing around because it's bad press.
They sell top quality professional pictures which you can buy in the museum shop so why even take pictures yourself?
