Total newbie here, but what kind of DSLR can take photos this "clean"? (pic related) Any recommendation? And no I don't plan on buying a $5000 camera and do professionnal shootings, I just need to have very high quality pictures taken for a press release.

This photo is 99% lighting and 1% camera. You could take a photo pretty much this good on a phone with this sort of lighting setup
But to answer your question, any DSLR you can buy today could achieve this. I reemphasise though, this photo is all about lighting

If he's any sort of good with a camera you could just show him this photo and he'd be able to figure it out.
To me it just looks like one key light coming from the subject's upper right, and then maybe a reflector on his left.

You need a medium format camera such as a Hasselblad with a digital back.
