I just started processing these photos from White Sands and I'm wondering how high key is too high key. I think the sand should be pretty blindingly white, but the rippled texture in the foreground is kind of neat too and I'm not sure I want to completely nuke that.

To be honest, the B&W approach makes the photo non-memorable.

This was a test shot of my handheld stacking technique, I took 20 something shots at 1/20 sec exposure, removed the few that were too blurry, aligned and stacked the rest and then PP. Since half of what you guys post is boring crap like random walls I thought I might as well post my test shots.
So what you should look at in this picture isn't the boring church shot but the lack of noise despite no denoising being used. See this comparison between one shot on the left and the stack on the right.

I think it's a combination of my inexperience, the extreme cold when I was shooting (I was shaking a lot) and the fact that I was using a manual focus lens with no focus peaking or other assistance tools.
It was also incredibly bright, crystal clear sky, shooting at noon, with snow covering the ground, and the viewfinder hood on the X-e1 is notorious for letting in light, so it was hard for me to see at points.
All this basically translates to: I need to up my game. I know these aren't that great, and the more I look at them the more disappointed I am; not in the camera, but in myself.

Don't strip the EXIF data, it's hard to figure out if you have soft focus, are shooting wide open, or what might be going on in the picture.
Looks like you'd benefit from a higher f stop. The women on the bench are a bit distracting. Some of the angle checked in green are really pleasing. The gap in red throws off a lot of the effect gained from those angles though, it gives a really harsh asymmetry. Maybe use a shorter focal length and move closer towards that halfway point or a longer one and move further back? A polarizing filter or doing something about that blown out sky would benefit the aesthetic too rather than a white blob.
There's real potential and I encourage you to revisit the shot keeping those things in mind. It could come out really well.

Beautiful. I love the color and the reflection in the bubble/other bubbles in the bubble. It's a feast for the eyes.

edges in the bokeh are too hard. for a staged image, you could have done more to let the bubble pop, so to speak, but the background competes with the foreground because the subject is so fragile. please keep things like that in mind.
