Is there any camera with a setting or customer firmware that will bracket with f-stops?
Like, same exposure value but take 3x pictures at, say, f/2.8, f/5.6, f/8.0?

It's theoretically possible for sure. Haven't seen it. Can't see why it would be done.
Best bet would be a Canon G series running CHDK.

At least on Fuji X cameras if you switch aperture to Auto, pick your shutter speed and the ISO is high enough.

that should work though, if set to shutter priority and iso is fixed, it can only adjust the f-stop to change the exposure when bracketed

yes but it can be set by software so it could be made to be changed between exposures, even if you have to wait a bit
this also doesnt really make sense as a limitation since the viewfinder is always wide open so it has to stop down for every single shot when shooting not wide open

it occured to me when i saw the picture of putin at the ambassador funeral that it could be useful to take a shot at multiple levels of DoF very quickily
