Usually there's this knob on top of your camera, all you have to do is turn it from the green box onto Av or M.

I hear some talk of under-exposing to get better saturation/colours lately, but I don't really see why that would work with digital (except if one channel is clipping of course).

Because one channel will clip, you're right. It's also easier to find yourself outside of sRGB at higher exposures

this could be corrected by using an in camera histogram and exposure compensation though, not manual mode exclusively. I use ETTL and aperture priority

I recently switched from sRGB to AdobeRGB. The difference is immense, the detail and information preserved is on another level. In sRGB most of the time colorful stuff saturated easily making a sunset and puffy clouds homogenous and bland. Even flowers had a Ken sama tier saturation right out of the box with very little detail preserved. Switching to AdobeRGB was the best decision /p/ talked me on.
