How would a used D700 compare with a current entry-mid range DSLR at about the same price ($500-1000)? What about the alpha a7?

You will not be disappointed with the D700 one bit. Absolutely fantastic body and built like a brick shit house. I highly recommend getting a good clean/service if buying second hand because a good majority of them have seen a lot of heavy use, due to people buying them for the build quality.

I would absolutely love to own a d700. Great camera, great tool for an aspiring professional (you can rent a d800 1 if a job needs ultra high res), and the lenses are great too. The d700 will not hold your hand, you must learn to use it properly.
I picked up a d700 a few months ago
coming from an f5, this is the first digi i've owned and i gotta say i wasnt let down
not quite as solid as my f5 but for a digital its really really decent.
All the buttons are in the right place so there's almost no ergonomic difference from my
honestly the only reason why i wouldn't get a d700 over other cameras in this price is if your after resolution
Not sure how it compares to ultra modern dslr's on ISO, but this thing is still a beast for high ISO as far as im aware

it's not the fucking master sword. you can put pretty much everything on auto and it'll churn out photo after photo with minimal input from the user. i don't understand this meme where "expensive cameras are more difficult to use". if anything, they're EASIER to use, since they're more responsive, have more physical controls and more overall capability. you could hand me a d3300 right now and i would have no fucking idea how to change the aperture.
An A7 or A7II would trounce the D700 in low-light though. The D700's good, as good as Sony's crop sensors are right now (ISO 3200-6400 as the upper limit), but it doesn't hold a candle to the 24MP FF sensors.

The A7 sensor would outperform a D700, and the EVF will let you see at night. Battery life does suck though.
D700 is legend. It's the F100 of the full frame era. I I have a D810 and still prefer the D700. Fucking awesome camera.

I bought an A7, with a decent old fast 50 adapted it's a piece of piss to focus manually even in the dark, dat Electronic First Curtain for no shutter shock, the first 2 pics I published from the cam were edited iso1600 jpegs, looked just fine.
I'd imagine using the mk2 with the IBIS system is just beastly.
i love my d700, I plan on getting a d810 next year, my d700 will then be a great back up although I wouldn't mind a d7100 either for the crop factor
I wish the D700 did video. Just plain old 1080P30 video. It'd be my ultimate dreamboat camera then. I can use it for my YouTube channel and also for regular shooting.
It's insane but D700s go for 300$ on eBay all the time.

It's always quite a pain handing my D800 to inexperienced friends.
I can set everything to full auto (auto area AF, auto ISO, half press AF, etc), but it takes time and you have to know how to change those settings.
