Where can I learn proper RAW processing? I really suck at it and all of my photos turn out either bland or over processed.

Youtube if you're cheap. Lynda if you're not.

In the darkroom.
Import to lightroom
fuck with the sliders
What about luminosity masks and the whatnot?

This is exactly what I wanted to say. That's the way I learned it.
Also, watching a couple of YouTube videos won't hurt anything.
Watching a couple of videos to understand the basics is great, but after that you should just do what feels best. Don't edit like other people do, develop your own "style"
Real men shoot medium format.

Literally this. At first it sounds stupid, but it's how I learned editing my images.
Learning by doing - It is as simple as that.

Sure, but you aren't gonna tell me that you save said MF shots as JPEGs!?

The answer is always YouTube.

Capture one makes a good processor. T kuyper you tubes vids are go in depth re; luminosity masks and photo shop processing , Read lum land scape forum they have a section on raw proc.
RAW doesn't mean shit if you can color correct it well. With the other file formats you get less data. Shit even JPEG can be good under the right conditions.
