My friend you will not starve to death or get a nutrient deficience after one day so don't worry. The only that might happen is your blood sugar dropping low so just bring a couple of bits of chocolate with you.
Sometimes my blood sugar drops low and my my vision goes blurry, a bit of chocolate fixes this straight away.

For a day hike I just bring a couple clif bars, a small bit of almonds, and a piece of fruit. Gatorade and Powerade both have electrolytes (salt).

Don't know much about pickled pack foods but cured meats like summer sausages and jerky are salty, tasty, and lightweight
Depending on how hard you're exerting yourself over the course of the day, a lack of salts could actually be a problem. Bring salted nuts and banana (dried or fresh) to deal with muscle cramps. You could even pack a few magnesium phosphate tablets too.
