Is sphagnum moss a viable water source? I've heard that the water is mildly acidic, which could possibly kill off bacteria in the water store, but could also make the water unsafe to drink. So, any ideas about this?

You should filter and sanitize your water regardless of the source. Yes, you could use that, but I'd rather distill such water sources.

What a douchebaggy way to get water
If sphagnum moss is growing, dig a hole in the sandy/mucky soil and it will fill with water in no time. Run it through a cloth to filter out sediment.
Boil or filter.
If you're feeling lucky, chug it raw and spit out the grit.

I remember an episode of Naked and Afraid where a dude drank water that was trickling off sphagnum moss. He thought the same thing you did and ended up getting giardia.
i wouldn't trust moss, but supposedly it has iodine in it and that's what kills the bugs, but its most certainly not 100% effective. However boiling the moss and making a tea out of it could prevent iodine deficiencies while in the deep woods, thoughts /out/?
