I've been keeping my gear in a messy pile, what's the best way to organise it? I have plenty of space for it.

The best to organize it is the way that's easiest for you to remember so that way you're not scrambling trying to find things before you leave.

>how do I organize my stuff
is pretty general
But, never store your sleeping bag stuffed in a stuff sack
test
Best is to hang sleeping bags and tents.

How should you store them if not in a sack?
Floordrobe!
Gear gets set out to dry on a drying rack in the living room.
Sleeping bag gets laid out over the chair in my office for a day or three, then rolled and put away on a wire rack in the office.
Sleeping pad (self-inflating) lives inflated behind my office door. I deflate/roll it up when I travel. Rebounds better when it's not been sitting rolled up for a month.
Boots live on the boot dryer by my front door.
Next to me, to the left of the couch i'm sitting on, is my drill/driver/saw, then two backpacks just past that under the dining room table.
Other side of the couch, my jacket and some other gear's on there. And the chair next to my couch and the window.
I'm dedicating a room in my next house to gear storage. Ideally it'll be connected to the garage, just a giant mud room.

A good down bag comes with a larger mesh sack to store it in. If you don't have one, just get a cheapo mesh laundry bag.
A synthetic bag can be stored rolled up.
If you store your bag in a stuff sack for too long, it smooshes the loft and you lose insulation value.
and down stuff gets hung in the closet
